Jerónimo Restaurant: alabaster lamps and oak wood in the new Mexican of the hotel The Madrid Edition

Mexican gastronomy with local products from Madrid merge in the new Mexican restaurant Jerónimo that opens its doors at the hotel The Madrid Edition, inaugurated this very year. In his kitchen, the renowned chef Enrique Olvera takes over, who has achieved many successes (such as the restaurant Pujol in Ciudad de Mexico, considered one of the best in the world on the list World’s 50 Best Restaurants) To accompany this high-level gastronomic experience, in which classic dishes that bring Mexican and Spanish cultures into dialogue stand out, the regional restaurant has luxurious interior design.

The restaurant takes its name from the Spanish painter and engraver Jerónimo Antonio Gil, founder and director of the San Carlos Academy in Mexico City, as a symbol of the strong cultural ties between Spain and Mexico that materialize through the vision of Enrique Olvera in Jerónimo. “The relationship between the cuisines of Spain and Mexico is so deep and has so many aspects that often the points where they meet are imperceptible. We want to focus our menu on the subtlety of these bridges: on the techniques and ingredients that make both cuisines resonate two different continents”, explains Olvera.


A bright and colorful space

With capacity for 150 diners, the restaurant is divided into four areas presided over by a large marble bar green. The space, with a casual and bright character, is dressed with limestone floors, in which black and white stone tables accompany the exuberant vegetation that gives warmth to its corners.

The space continues with an elegant double-height room, which is distinguished by its carved dark oak wood panels, inspired by the ornamental details of the baroque portal outside. Its yellow leather chairs and stools make up the roib dining room that is complemented by two striking alabaster and plaster pendant lamps by the designer Emmanuel Levet Stenne, which symbolize the sky and the celestial planets.
